Operation:
This unit automatically weighs and mixes ingredients according to pre-set recipes. Up to 8 ingredients can be handled and the unit is suitable for most confectionery recipes - Hard candy, milk boils, butterscotch, toffee, caramel, fondant, and jelly. The complete weighting cycle from the weighing of the first ingredient to the discharging of the weight and the mixed recipe is automatic. The machine can also be operated in a manual mode.
Description:
The machine has a rigid from carrying a stainless steel weighing hopper, There is a high-speed axial flow shear mixer fitted in the hopper. Ingredient feeds are mounted on the frame over the hopper. The ingredient feeds include a vibrator feed for crystal sugar, a solenoid valve for water, and an electro-pneumatic valve for glucose. Other ingredient controls are available, for example, vibrators for starch or valves for fat. A maximum of two vibrator feeds and seven valve feeds can be fitted subject to an overall total of no more than eight feeds. The weighing hopper presses upon an electronic load cell. The weight of the contents of the hopper is shown on a digital display in the control panel. The computer can store up to twenty recipes, each containing up to eight weighed ingredients, plus additional metered liquid ingredients of small quantities. A recipe can be called up by number via a keypad. There is also a battery back-up to protect variable memory for three months if power is disconnected.
