1-Used Peerless Super Grain Pizza Sheeter
17" transfer belt
2 flour dusting hoppers
Model: S-8000
Serial: 201314
The cross-sheeter consists of the following sub assemblies.
Transfer slide plate with air jet
Cross-sheeting conveyor (infeed section and inter- connecting section)
Cross-Sheeter(s)
Flour duster(s)
Discharge conveyor
Transfer slide plate is mounted across the infeed end of the cross-sheeting conveyor and is positioned to allow a sheed dough piece to transfer properly from the primary sheeting (transfer) conveyor onto the perpendicularly mounted cross-sheeting conveyor.
The air Jet is provided to lift the front edge of the sheeted dough piece as it reaches the feathered edge of the transfer slide plate.
The cross-sheeting conveyor is fabricated of stainless steel, nickel-plated steel, aluminum and food-grade plastic.
The Rotary Flour Sifter consists of a product hopper with a bottom perforated discharge screen. A series of rotating blades contained by two or more slotted hubs scrape against the screen and permit flour to sift out. Product quantity is controlled by the speed of the rotary blades using a variable speed (DC) motor.
The discharge conveyor is the final step of the pizza sheeter system, similar in appearance and function as the previous conveyors, it incorporates a pivoting bracket to adjust the elevation of the discharge conveyor roll to accommodate downstream conveyors.
-
The one piece cast iron sheeting head frame supports the infeed conveyor, degassing roller, dough guides, and two (2) pairs of sheeting rollers with scrapers.
The degassing roller is a grooved, food grade plastic roller with its height about the conveyor.
The dough guides are a pair of food-grade plastic barriers which can be adjusted (slide bars) to direct the dough piece coming from the infeed conveyor into the first set of sheeting rollers. Hand knobs maintain the guides on cross bars.
The infeed conveyor is constructed of stainless steel and incorporates a fabric surface belt conveyor which is gear driven from the top rear sheeting roller. The self centering dough guides are teflon-coated steel, mounted so as to converge from the infeed to the discharge end of the conveyor. Adjustments are made using a hand wheel driven screw with a right and left hand threads. This permits the guides to be maintained equidistant from the conveyor centerline at all times. A digital read-out is available for consistent repeat settings.
